What is the major difference between SAPUI5 and SAP Fiori?

 The difference is that Fiori is a design concept, and SAPUI5 is a library framework. You can still build custom UI5 Apps that do not adhere to the SAP Fiori design guielines, but they are called custom UI5 Apps.... For reference purposes you can check this video:-

Well FIORI is a flower, someone had to convert that into a usable application, that is where the UI5 comes in. UI5 is what add the stem, the petals and colors to the flower but the design of the flower lies in FIORI.
